Pro-snowboarder turned adrenaline-fueled culinary master, Chef Akira Back brings his modern tastes of Japanese cuisine prepared with a Korean essence to the Middle East for the first time. His restaurant sits at the top of W Dubai - The Palm, soaking in panoramic views of the Palm and city.
Chef Akira and his team, led by Chef de Cuisine Giovanni Ledon, strive to bring a new dimension to Japanese cuisine and create a memorable experience by exploring the endless possibilities of combining interesting ingredients and unexpected flavours. Guests can choose to sample the ‘Greatest Hits’ which includes a chef-chosen selection of some of Akira’s greatest dishes, with optional wine or sake pairing available. For those who choose to tackle the menu solo, examples of dishes include A5 wagyu served with Japanese mushrooms, umami sauce and truffle, chargrilled spatchcock chicken with chipotle miso, king crab fried rice crispy shallots and a selection of signature rolls and sashimi. Finish with something sweet and try the black and white sesame matha cake with salted agave ice cream. Do note that there are also dedicated vegan and gluten-free menus available.
The wine list offers a comprehensive selection, from reliable favourites to ‘new classics', but don’t miss the sake menu and cocktail list for something a bit different. One particular signature serve named Shiso mixes gin, sake and kaffir lime, while another called Oda combines vodka, martini bianco, lychee and lemon grass.
Akira Back owns an impressive global portfolio of restaurants, with 16 currently open and many more due to launch. With 20 years' experience, Akira has won numerous awards in his time including a Michelin star at his famed restaurant DOSA.
