As you might expect the menu begins with a lineup of sparklingly fresh ceviches - choose from a selection of fish like sea bream, tuna or sea bass, or allow the team to put together a platter of their signature combinations to take the problem of choosing a favourite out of your hands.
The following roll call of small dishes are designed to be shared, and we’d recommend eating with a group so you get a little taste of everything here. Oxtail with tamarind mayo, roasted octopus and king crab all feature. Elsewhere there are ‘Iron Pots’ which have been slowly cooked to allow all the flavours of the dish to combine and harmonise. Go for a fresh mix of sea bass, rice, lime and chilli of plump for something comforting like the dried potato, black truffle and mushroom stew.
If you’re not in the mood to share there are also traditional main course plates that feature luxurious ingredients like Wagyu cuts and beef fillet. A line up of tantalising sides, like chilli and garlic broccoli and crispy potatoes complete the run of savoury plates.
For those happening upon COYA Dubai around lunchtime you’ll be pleased to know that there’s a set menu which offers very good value for money. For AED 123 you will be allowed to choose two small plates from a selection of best sellers, as well as one main.
Interiors are plush and comfortable, while COYA Dubai also houses the brand’s signature Pisco library, where you can explore this ancient drink (which is apparently Peru’s national tipple, no less) and try a whole myriad of cocktail options with the spirit at their heart. For an evening with friends the lounge area is one of the most comfortable in Dubai, with scenic views of the twinkling city setting it apart from your average bar.
