There are four to choose from: Australian Stockyard grain-fed beef, USA Prime grain-fed beef, Canadian Premium 150 day corn-fed grade AAA Angus beef and Irish John Stone grass-fed beef. Steaks are sold by weight and the menu even advises on cooking temperature and which knife to use.
