One of India’s most adored and celebrated celebrity chefs, Sanjeev Kapoor, is the mastermind behind this fine-dining Indian restaurant, which finds its home at The Canvas Hotel.
Step inside the attractive dining room and you’ll find rustic timber walls alongside columns that are made to look like tree trunks wrapped with vines. Despite the design elements which conjure up images of natural landscapes, stylish touches such as flagstone flooring and black and white snapshots of the Taj Mahal and Sanskrit steles help to remind you that this is a fine-dining destination.
The centrepiece of the dining room is the interactive open kitchen, where you can watch the chefs creating your dishes and maybe ask them to share a few of their cooking tips. The menu at Signature by Sanjeev Kapoor takes classic Indian dishes and gives them a contemporary update, presenting them at the table with style and flair. You can visit the restaurant at either lunch or dinner, and highlights from the menu include dishes such as paneer pudina khaas (a combination of cheese and mint), and butter chicken imbued with a mango sauce.
As is typical of fine-dining establishments, courses at Signature by Sanjeev Kapoor are broken up by palate cleansers, which might take the form of an icy passion fruit panna or a kokum masacola (an herbal fruit found in India) which is given an unexpected twist.
For al fresco dining, post-prandial drinks, or if you’re just looking to enjoy some fresh air, Signature by Sanjeev Kapoor does feature an intimate garden terrace at the side of the main dining room. The cosy terrace is lined with potted plants and features plump couches and chairs towards one end, while at the other end there is a small number of tables which can be used for outdoor dining.
