Headed up by Kim Joinie-Maurin, who currently has three Michelin-stars to his name, the menu pays homage to his melting pot heritage with a taste of France, Italy, Spain and many more, all of which are beautifully presented might we add.
On the a la carte menu you’ll find lobster macaroni with black pepper sauce, crispy prawns espelette, seabass carpaccio and lamb praline with a parsley crust and artichoke emulsion. Finish with a sweet treat of chocolate mousse, crème caramel or seasonal fruits if you want something fresh and simple.
If you’re feeling extra extravagant, the seven course four destination culinary flight menu is definitely worth splurging for. This menu features the likes of green olive tapenade, wild turbot, candele with mushroom and artichoke and a pre dessert of glazed banana before moving on the main dessert of strawberry meringue or chocolate tart.
Since it also doubles up as a bar (with views like the ones it has, why wouldn’t it) the drinks menu has just about every wine, spirit, beer and cocktail you could ever imagine. So whether you want a wine paired with your meal, or want a classic cocktail Skyview has it all.
