DRIFT is under the artful direction of Chef de Cuisine Maxime Le Van. Originally from Nice, Le Van has worked at a number of prestigious restaurants in London, including L'Atelier de Joel Robuchon, Club Gascon, and Paradise By Way of Kensal Green, so he knows a thing or two about rustling up a good plate of food. Le Van’s menu showcases an innovative take on classic Provençal cuisine, with an emphasis on using the finest organic ingredients. Freshness and simplicity is the aim of the game here, which Le Van achieves effortlessly.
