Celebrated mixologist Dom Carella from Italy designed a cocktail menu that showcases a variety of flavours and innovative combinations by infusing his spirit-based and non-spirit-based drinks. The bar works in synergy with the kitchen to utilise previously wasted by-products to create outstanding flavours. The aim is to marry comfort with the element of surprise, not just with the signature cocktails but also with the complimentary beverages. The bar also offers tasting cards that will tell you how your drink is balanced between sweet, fruity/floral, bitter, strength and umami.
